How to Choose & Cook (Quick Ratios)

  • Buckwheat: 1 cup groats : 2 cups water; rinse; optional dry-toast for aroma; simmer 15–18 min.
  • Bulgur: 1 : 1.5–2; pour boiling water, cover 12–15 min or simmer 10–12 min (grade-dependent).
  • Millet: 1 : 2.5–3; rinse well; simmer 18–22 min (add milk/broth for creaminess).
  • Rice (plov): 1 : 1.5–1.7 (long-grain); rinse until clear; rest 10 min.
  • Barley (yachka): 1 : 2.5–3; soak 30–60 min for tenderness; simmer 25–35 min.
  • Split peas: 1 : 3; no soak needed (optional 2–3 h for faster cook); 35–50 min.
